Super easy strawberry banana bread. Yum!
Super easy recipe, super delicious and my girl loves it!

Ingredients:
- 1½ cups of very ripe bananas, mashed (approximately 3 medium-sized bananas)
- ½ cup of unsalted butter, melted and slightly cooled
- 2 large eggs, lightly beaten
- 1 teaspoon of vanilla extract
- 2 cups of all-purpose flour ( or 1cup whole wheat flour and 1 cup all-purpose flour)
- 1/2 cup of sugar ( I actually reduce this to 1/3 sometimes to make it less sugar 🙂
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- ½ teaspoon of salt
- 2 cups of finely diced strawberries ( I used fresh strawberry)
Instructions
- Preheat your oven to 350 degrees F and generously grease a 9×5-inch loaf pan with nonstick spray or classic Pam.
- In a large bowl, combine the mashed bananas, melted butter, beaten eggs, and vanilla extract. Mix well.
- Add the all-purpose flour, sugar, baking soda, cinnamon, and salt to the banana mixture. Stir until all the ingredients are thoroughly combined.
- Gently fold in the finely diced strawberries, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, using a spatula to smooth the top for an even surface.
Bake in the preheated oven for 55-60 minutes, or until the bread turns golden brown and a cake tester inserted into the center comes out clean. - Allow the bread to cool in the pan for 5 minutes, then carefully remove it from the pan and transfer it to a wire rack to cool completely.
- Once cooled, slice the bread and serve.
