Super easy strawberry banana bread. Yum!

Super easy recipe, super delicious and my girl loves it!

 This is adapted from Yummy Toddler Food. Thank you for sharing the recipe!

Ingredients:

  • 1½ cups of very ripe bananas, mashed (approximately 3 medium-sized bananas)
  • ½ cup of unsalted butter, melted and slightly cooled
  • 2 large eggs, lightly beaten
  • 1 teaspoon of vanilla extract
  • 2 cups of all-purpose flour ( or 1cup whole wheat flour and 1 cup all-purpose flour)
  • 1/2 cup of sugar ( I actually reduce this to 1/3 sometimes to make it less sugar 🙂
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • ½ teaspoon of salt
  • 2 cups of finely diced strawberries ( I used fresh strawberry)

Instructions

  • Preheat your oven to 350 degrees F and generously grease a 9×5-inch loaf pan with nonstick spray or classic Pam.
  • In a large bowl, combine the mashed bananas, melted butter, beaten eggs, and vanilla extract. Mix well.
  • Add the all-purpose flour, sugar, baking soda, cinnamon, and salt to the banana mixture. Stir until all the ingredients are thoroughly combined.
  • Gently fold in the finely diced strawberries, ensuring they are evenly distributed throughout the batter.
  • Pour the batter into the prepared loaf pan, using a spatula to smooth the top for an even surface.
    Bake in the preheated oven for 55-60 minutes, or until the bread turns golden brown and a cake tester inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 5 minutes, then carefully remove it from the pan and transfer it to a wire rack to cool completely.
  • Once cooled, slice the bread and serve.
